Ingredients

Serves: Update

o 4 cups long-grain white rice (about 2 pounds)
o 2 pound chicken gizzards and livers
o 1 pound fatty ground chuck
o 3 teaspoons salt
o 1/2 teaspoon black pepper
o 6 tablespoons vegetable oil
o 3 medium onions, chopped
o 2 medium green bell pepper, chopped
o 4 celery ribs, chopped
o 2 teaspoon cayenne
o 1/4 cup all-purpose flour
o 2 cups reduced-sodium chicken stock or broth
o 2 pounds large shrimp, shelled and deveined
o 3 cups thinly sliced scallions (about 3 bunches)
